These yummy protein bakes really are the treat without the cheat! They combine delicious cinnamon cupcakes with tasty protein powder to create scrumptious protein snacks to enjoy before or after the gym. Plus, they are super easy to make.
This recipe is amazing for a gym-buddy's birthday, a healthy convention or even just to enjoy by yourself.
It makes twelve delicious cupcakes and a protein cake loaf.

Ingredients
Main layer:
3 cups of plain flour
1 1/2 cups of milk
1 cup of sugar
2 eggs
4 teaspoons of baking powder
2 teaspoons of syrup (not necessary but tastes better). You can also use vanilla extract instead.
A pinch of salt
1/4 cup of melted butter
Brown layer:
1 cup of coconut sugar (or brown)
1 cup of soft butter
2 tablespoons of plain flour
1 teaspoon of cinnamon
1 scoop of protein power (we used the chocolate cookies flavour)
Method
Step 1:
Preheat the oven to 180 degrees Celsius (fan) and then grease a loaf tin and a cupcake tin (this recipe will make twelve cupcakes).
Step 2:
Mix the three cups of flour together with the milk, sugar, eggs, baking powder, syrup (or vanilla extract) and salt. Stir this or whisk it in a stand mixer until it is well combined. Next stir in the 1/4 cup of melted butter until smooth and tasty.
Step 3
Next, pour this delicious mixture into your two tins (loaf tin and cupcake tin). Make sure not to fill the tins up to the top as these cakes rise in the oven.
Now it's time for the high-protein layer of cake...yum!
Step 4:
Beat together the softened butter with the coconut sugar, flour, protein power and cinnamon. Do this until it is smooth like peanut butter. Then use a teaspoon and place roughly one spoon of the mix into each cupcake and swirl it around a little bit to separate it out (but you don't want it fully mixed in).
Do the same into the loaf tin with the remaining mixture. There should be about 5-8 teaspoons left for this tin.
Step 5:
Bake these in the oven for about 30 - 35 minutes. The cupcakes will need a little less time (about 25 minutes). You want to be able to insert a knife into the cakes and have it come out clean but a little sticky, so that the cakes aren't too dry.
Once cool, serve these yummy cakes to all of your healthy friends and family (or just yourself. Don't worry, we ate loads ourselves when we made these).
