Happy Halloween Mean Proteiners! As we all know, Halloween is overshadowed by eating copious amounts of sweets and chocolates. So why not bake yourself some high protein cookies to at least get a little protein in?
This high protein cookie recipe will make you nine spooky giant cookies. Plus, you only need minimal ingredients and an couple of bowls! So bake some treats for your gym friends, workout-crazy family members or just for yourself as a post-workout treat!
Ingredients
120g butter, slightly melted
5g of sweetner
60g golden caster sugar (75g if you're not using sweetner)
1 tsp vanilla extract
3 tsp red food colouring
35g scoop of protein powder (we used cookies & cream)
160g plain flour
½ tsp bicarbonate of soda
A handful pecans (or any topping that you like)
Icing:
2 teaspoons if icing sugar
A couple of drops of red food colouring
Method
Heat oven to 180C/160C fan/gas 4 and line two baking sheets with baking paper.
Mix the butter and sugars together until fluffy (we used a stand mixer for this for around two minutes).
Then beat in the egg, vanilla extract and red food colouring (the stand mixer will take about 2 minutes on medium)
Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt (for a stand mixer, use the slow setting to begin with and then up the speed to medium for 3-4 minutes).
Then crumble up a handful of pecans and mix in. You can also put a couple on the top of each of the cookies too to make a Halloween design like our pumpkin face! 🎃
Scoop nine large tablespoons of the mixture onto the trays, leaving enough space between each to allow for spreading as these rise.
Bake for 14-15 minutes or until firm at the edges but still soft in the middle as you will find that they harden as they cool on the pan.
Leave to cool on the tray for a few minutes.
If you want the red blood icing, put the icing sugar into a bowl and mix with a couple of drops of water and a couple of drops of red food colouring. Mix until red and smooth. Then drizzle this onto your cookies and leave to set.
